1 ¼ cups brown rice or quinoa penne
1 cup green beans | cut in half
1 cup soaked red or kidney beans [canned beans is great as well] | rinsed
¼ cup flat leaf parsley | chopped lots
2 tbsp goats feta
2 tbsp extra virgin olive oil
2 tbsp fresh lemon juice
smidge of sea salt
smooch of black pepper

Cook choice of pasta [I used quinoa penne for a more firm noodle vs limp] adding green beans during the last 3 minutes of cooking. Drain & run under cold water to cool.
Toss the cool pasta & green beans with kidney beans, parsley, goats cheese, EVOO, lemon juice. Shake your sea salt & pepper money maker over your bowl of nutrients.
