Ingredients

1/3 cup dried cranberries
1 cup fresh green beans | cut into bite-sized pieces
2 large sweet potatoes | peeled and cubed
1 tsp of rich in antioxidants cinnamon
1 cup red quinoa
½ cup feta goat cheese | crumbled (* leave out for Dairy-Free)
½ cup fresh parsley | finely chopped
1 tbsp coconut oil
1 medium onion | diced
1/3 cup high in heart-healthy omega-3 fat walnuts | chopped
2 cups organic vegetable broth

Method Of Love

  1. Toast walnuts in a large pot [NO oil] over medium heat for 5 minutes simply to intensify their flavour. Transfer to a small perfect bowl.
  2. Heat coconut oil in same pot over medium-high heat. Add onion and cinnamon. Stir for 2 minutes, adding in the sweet potatoes. Pour in broth & bring to a boil. Cover, reduce heat & simmer until sweet potatoes are almost tender for 8 to 10 minutes.
  3. Return to boil, add rinsed beans cook for 5 minutes.
  4. Stir in quinoa and dried cranberries, cover & remove from the heat.  Pour into serving bowl, sprinkle with walnuts, parsley & goats feta.  Tickle those taste buds, be grateful for your ability to try something new, bless your dish & enjoy.
