Broccoli Carrot Soup



just the right amount of coconut oil
1 onion | chopped
2 carrots | shredded with potato peeler
2 gorgeously scented garlic cloves
6 cups of broccoli florets | chopped
5 - 6 cups of vegetable stock
1 cup quick oats

  1. Sauté the just right amount of coconut oil, chopped onion, carrot shreds and garlic until tender ... MEANWHILE ...

  2. In a large pot, add the broccoli and quick oats. Pour the veggie stock into your large pot and simmer with a lid on until tender. Add more stock if the vegetables are not completely covered.

  3. Remove from heat and put all the ingredients into your blender and puree.

  4. Serve with extra toppings such as slivered almonds, sprinkle hemp hearts, fresh herbs, or just a smile!
