'Cado Salad



½ bunch kale | leafy part only
1 cup chickpeas | if canned, rinse
4 crispy carrots | shaved
1 handful of sprouts | any kind you love!
1 avocado | cut into small cubes
big handful of almond slices


2 stalks green onion | rinsed and finely chopped
¼ tsp fine grain sea salt | plus more to taste
2 tbsp fresh lemon juice
1/3 cup extra virgin olive oil
2 tbsp ripe avocado
3 tsp honey (* use maple syrup for Vegetarian + Vegan)
fresh pepper to taste

Method Of Love

  1. Make the dressing in blender to purée the green onion, salt, lemon juice, olive oil, avocado, honey, and pepper until smooth. Taste, and adjust with a few more pinches of honey or lemon juice.

  2. Combine the kale with about half of the newly loved Avo dressing in a large bowl. Use your hands to massage the dressing into the kale, softening up the kale into green clouds.

  3. Add the chickpeas, carrots, sprouts, more dressing, and pinches of salt. Toss together.

  4. Add the avocados and almonds, give one last gentle kiss with your hands, serve, be grateful and SMILES.
