Creamy Egg Salad Sans Mayo



8 hard boiled eggs
4 avocados | two creamed & two chopped
2 green onion [scallion] | chopped tini-tiny
½ cucumber | chopped tini-tiny
2 dill pickles | chopped tini-tiny
4 tbsp Dijon mustard
sea salt & peppy pepper | to your liking

Method Of Love

  1. If you do not have them in your fridge already, hard boil 8 oeufs. BEST way to make flawless hard boiled eggs: put eggs into pot o'water, turn heat to boil. Once the water starts to boil, turn the element off and let the eggs sit in the pot for 20 minutes.

  2. While the eggs are hardening in their shells, cream 2 avocados. Cube 2 other avocados.

  3. Once oeufs are cooked, cream together the creamed avocados with all of your shelled hard boiled eggs, add Dijon mustard, dill pickles, vert onions, and cucumber tini-tiny pieces.
